Manx Kippers are made using herrings and have a deep bronze colour with a distinctive rich smokey and salty flavour, which is a result of the traditional curing methods. This age old method of producing kippers is simple yet takes years to master.
How long do kippers take to cook?
Kippers require very little cooking, and the best method is to gently poach them for no more than a few minutes. Bring a large frying pan of water to the boil, remove from the heat, add the kippers and leave in the water for about 5 mins, then drain and serve.
Who invented kippers?
The Kipper was invented by a man called John Woodger in 1843. John lived in Seahouses, Northumberland and worked as a Fish Monger when one day he left some prepared fish in a room overnight with a smoking stove.

How are Manx kippers made?
Kippers are smoked Herring. Once in the factory, the Herring are put into a splitting machine, which splits them along the back from head to tail, guts and cleans them. The Herring are soaked in a brine mixture and then put onto Tenter Hooks, hung on racks and smoked in large smoking kilns.
